TK: Super Easy Crunchy Fishballs
Ingredients:
1 Whole Relyeno - This is the easiest version. You could prepare your own, but I'd rather get the already deboned, pre cooked, seasoned fish mix.
3-5 Garlic cloves, minced - I want mine a bit garlicky!
3 Eggs - Add more depending on how much fish mix you have.
2 whole carrots, minced - It's upon one's own preference how "minced" you want your carrots to be. I got mine not too small because I wanted the mouth feel of the crunch of fresh carrots.
Pepper to taste - no need for salt because the relyeno already have salt.
Herbs - optional, according to preference on your fish. I added dried basil on mine.
Flour
Bread crumbs
Oil for frying
Steps:
Mix in order: cloves, carrots, fish.
Add eggs one by one until the mixture is enough to make a ball. Test via making balls in your hand and if it holds, stop adding more eggs.
Add pepper and herbs. Mix well.
Make the balls, dust with flour and roll in Bread crumbs.
Set your heat on high until the oil is hot. Drop a few balls on. Do not overcrowd.
Prep tissue paper to put the fried balls on. Enjoy!
Yields around 20 pieces
